When I was traveling I accidently canceled the encounter and I was wondering if i will be able to see again this encounter

Yeah, you can still see the special encounters that you have ignored. As long as you didn't engage(=said 'yes' to 'Do you wish to encounter (special encounter) and entered the map) one, it will be available the next time you trigger a special encounter.
