First off theres a guard at the door so they'll PROBABLY see me.
Second I haven't levelled sneak whatsoever.
I think the restoration patch fixes that bug though.
The only other way out is to kill bishop and fight his entire gang. But after that you can go bang his wife.
Also if you didn't have any Jimmy hats then you will have gotten the daughter pregnant and get an ending where the bishops have your illegitimate son. This ending is confirmed as canon as an npc in new Vegas confirms it.
Go back in time and then *don't* screw the daughter of a crime boss.
The NPC in New Vegas does not cofirm it. He alludes to the possibility depending on how literally you take everything people say and make the assumption that because the father did something so will the child.

Ending after fallout 2 Not long after the destruction of the Enclave, the Bishop Family of New Reno was blessed with a child. This child seemed to have little in common with the Bishops, preferring instead to spend his days exploring the wastes. When he turned thirteen, he seized control of the Bishop Family and led them to victory over the remaining New Reno families. He died quietly in his sleep at the age of seventy-three, never having known his real father
"Spend his days exploring" the wastes coupled with taking over the family seems to coincide with the new Vegas npc dialogue of "He knows the Wasteland like the back of his hand, and he likes to wander it."
It's the closest thing to confirming it besides just saying he's the Son of the chosen one, which nobody would know anyway
As an example, in Fallout New Vegas, the 'courier' is a wanderer (been from the Pacific ocean to middle USA), and has nothing to do with the wanderer from FO1 or FO2.
As for Bishop's daughter, or wife for that matter, you should always visit Vault City and get the briefcase from Moore (I believe?), the guy rambling about Vault City near the entrance to the vault. If you support him, he wants you to deliver it to Bishop, so you can use that as a way out once you get there. However, you have to finish Bishops quests in a timely manner, and every time you go back up there without anything to report is risking him shooting you.
As a small spoiler, if you do sleep with his wife (not sure about his daughter) and finish all of his quests, he will still kill you for doing that.

Well, Bishop is an ass anyway, and you have to avoid a lot of what is good about Reno to work with him, so it's not really worth the effort. If you can't get out of there, you can always just attempt to assassinate him, which you can do through the safe in his room. With high repair, you can change the lock on the safe, which will trigger the trap and kill Bishop when he tries to open it. With high traps, you can set your own explosive and wait for him to open it that way. This may require dialogue with Mrs. Bishop, though. Not exactly sure.
Also, keep multiple saves, man... this is actually one of the games that slowly learned me in that regard. I'll use a whole page for saves for one character. Every time I save, it goes in a new slot, until I hit the end and start the process over at the first one again.
But, on a side note, you're playing the game the way it was meant to be played. Accept whatever comes and roll with it. That's the best way to go about it.
I had to revert to a previous save unfortanetly, I was too weak to beat Mr. Bishop.
When you get near him again ,after taking the job, he will start shouting and speech options should pop up. Don't get flippy .
Third time he will just start fighting.
I did his wife and his daughter. ( And got the Vault tech science ? upgrade, planted the bomb, got the info....and stole everything )
Stick close to the walls and just sneak past him.
