One hander can be good as there is no two-handed weapon that counts as "unarmed".
You might want to avoid Fast shot as targeted hits (especially in the head/eyes/groin/arms) can be very important. Enemies will fire at point blank, so criticals hits are very important before they deal too much damage.
I'd say the most important SPECIAL stats would be Agility (more action points) and Endurance (you'll have to take some hits before reaching the target)
Remember, these weapons count as "unarmed" : Brass Knucles, Spiked Knuckles, and Power Fist (rare late game weapon)
Your advice would be great, if you only want to fight against very earlier enemies. Your build would be less effective as the game progress.
Unarmed skill basically has the highest amount of points at the begining, even if you pick gifted trait. That means, you can max the skill very quickly, since the amount of point to reach the max is very little. In other words, you WILL get the highest chance to hit for unarmed, regardless. So from my knowledge, One hander seems a bit of waste.
On the other hand, fast shot is far more greater than one hander as for the later circumstances. Sure, you can't perform any eyes or balls attacks, but it doesn't matter, you'll get the SLAYER perk later which gives you every melee attacks as crits.
Also Considering the fact that you'll get Bonus HtH attack - 1 less AP costs for unarmed attack - very early in the game, you can punch for only costs of 1 AP with the fast shot traits.
TL;DR - 5 punches VS 10 punches. Who wins?
make sure your stats will let you pick up the needed slayer perks, bonus hth attacks, and movement to get you into fist range faster without wasting combat aps.
So it works with any weapon, guns, melee weapons, unarmed weapons, what ever.
