Understanding & fitting together block angles and shapes
I really struggle to find and organise the right angle for various blocks. I realise I am a bit of a moron when it comes to things like this, but I really struggle beyond the basic square, half square, and triangle. So I tend not to design much outside of those shapes.

Are there any recommended tutorials and guides on using different shapes and fitting them together?

Only practice can help you... I had the same trouble for almost 2 months (i'm not playing often) but after practicing 40-50 ships i'm doing better (still not ideal)
Advice that helped me alot when restoring ships : often you can't understand which shape you need to use in that place by looking at identical not damaged object (or side against symmetry axis) but it seems more easy to understand needed form if you remove same block and look on an empty space where it belongs.

Download a few ships from the workshop and spawn them in a creative game. There you can more easily examine the makeup of ships. You can press H to get whatever materials and tools you need. Press G to enter godmode which makes it easier to move around. There's also a feature when you press escape to freeze time so that it remains daytime. Ask about it if you need it.

Thanks ronmc, yeah I was actually just watching that now. I think the key here is practice makes perfect, and playing around with other ships and using the blocks again and again.
I don't know if it is how the layout of the blocks is presented, or my own inability to "see" the shapes, but the shapes often do not seem the same after I actually place them.

I also have a problem in seeing, or picturing in my mind, what the blocks will look like when placed. Maybe different icons would work better. I think ordering them differently would help too. There are some shapes that fit together that are placed far apart in the chooser dialog.
