That has never been my experience with them, I have had several servers with them, ARK, Space Engineers and Empyrion, I have had to wait as long as 3 weeks for them to update my server before.
If you are going to stay with Nitrado I suggest you set your steam to only update empyrion when you launh the game, then go to your Empyrion folder on your PC and make a shortcut on the desktop of "EACLauncher.exe" if you use EAC or "empyrion.exe" if you don't and lauch the game from it. I would also delete the Steam Shortcut for empyrion from the desktop so you don't accedently lauch it from it because if you do there is no way to stop the update.
This should stop steam from auto updating until the next time you launch it from the steam shortcut or in steam directly, this way you can stay at the same version until nitrado decided to update the server.
Personally I host my own servers now, I would suggest you find a better host or host them yourself.
