Is there a guide or link explaining what the different planets and stars are? For example, a planet with the letter 'M' would be...

For the stars, they are based on the stellar classification as seen here:
https://en.wikipedia.org/wiki/Stellar_classification

For planets, they go by type such as Temperate, Desert, Snow, etc.

Your PDA has a description in the Empyrionpedia. Think it is the last tab on the PDA.
I will say I am playing ravien_ff's Project Eden but pretty sure it is in vanilla as well.
