Every time you warp somewhere it will reveal the adjacent warp locations. Just keep exploring.
There is only one solar system at this point. They may be adding many more in the future but first they need to add content that makes multiple solar systems actually have a point.
You can also find scenarios on the workshop that have potentially hundreds of planets and moons. You can also create your own if you wish.

Right now the only way to do it is fake it by just making your sector map look like multiple solar systems. There's also server mods that allow warping between servers.
