I looked at the Empyrion forum on ravien's thread about custom traders, but it was just bug thread. I haven't found more information on how to customize traders' files.
Look in your Empyrion - Galactic Survival/Content/Configuration folder. There you will find a TraderNPCConfig.ecf file. That is where all the default traders are.
If you want a custom one for your scenario, just place it under your scenario folder like so:
Name Of Scenario/Content/Configuration.
I use Empyrion Playfield Designer to create my custom traders because it works so so much easier than trying to do it by hand.
However then TraderNPCConfig.ecf file was not modified to customize it.
I might I get better luck now. :)
edit : I wonder if it is possible to add vessel parts to traders as well?
You can add anything to traders.
