Against 3 Armored Cumans (experienced fighters), simple Henry had no chance
I have found it best to hop on Olena (a specific horse), then ride past the Cumans, bumping them is enough to free Theresa), and then riding, turning and galloping away
p.s.
to make ur horse faster... (if u feel it's needed)
once u mount the horse, open inventory, <i>, ...
select the "sidekick" flag in the top left screen, then select the "Tack" tab
select the Saddle, select unequip, <e>,
Horse will now run much much faster
And remember to double-click <L-shift> to gallop !!! good luck
(if u have the inventory space, you can keep the saddle)
After a few more attempts and 3 more deaths while riding, I finally made it to the castle! I've rarely seen such a bad start to a game.
Especially as the combat system is quite strange, but the controls for the horse barely worked!
Whoever came up with something like this should perhaps stop developing games!

I'm now on my second playthrough, full Merciful Celibate, what fun!
You can actually just punch a guy in the back of the head and take off, abusing fence hopping to avoid them cutting you down and then riding off the horse to avoid being killed.
It also makes the beginning much more intense since it's easy to screw up, but the punch is 1000% worth it.
Gives more than enough time to get to the horse and you still save Theresa
You just have to press X to whistle and that gets their attention.
You even get the achievement.
