until, for role-play reasons, i decided that Henry's Herbalism was a "Trained" skill...
... and that Henry's Mother was an Herbalist and had trained Henry
so, now i imagine a younger Henry following his mother through the fields around Skalitz
... chasing butterflies
yes, many of the animations of this genre are too slow, boring, and detract from the experience - and/or are simply annoying af
but we're getting the exact same game world that has been ported to a more recent version of cryengine, with a few more bugs removed, (but i suspect the code still has much of the old spaghetti-code that they still haven't unraveled)
keep your hopes high, and risk disappointment, or ...
... stop expecting something better from the devs that gave it to you in the first place

No need to make it that complex. During the quest 'in god's hands' Henry explains his knowledge of using Marogold potion to Johana. Since burns and other minor injuries weren't uncommon in a forge, it is quite plausible that basic herbalism and Alchemy was part of his blacksmith apprenticeship.
the information Henry provides to pass Johanka's test is provided by the "First Aid 2" Perk that Henry can only acquire after arriving in Rattay, but Henry knew Herbalism in Skalitz - without any First Aid perk, so i think your suggested connection is fragile
The OP was asking why don't the Skalitz Refugees go pick flowers to earn money to eat
Your suggestion seems similar to the game's suggestion, that Herbalism is more of a general knowledge thing, which only supports the OP's question of why are beggars starving when there's plants to pick and sell ?
My suggestion is that Herbalism must be a unique skill that can only be trained, like reading, and that Henry was "trained" before the Skalitz prologue, less "disbelief" for me ;)
