Personally I like to do as many thing as possible in a single playthrough. I don't play as 100% good. More like a mercenary for hire. Just do anything for the pay.
If you don't want to invest fully into thief stuff, then it's not a loss. Looting corpse is gonna be primary source of money of many in this game. But at least, level up your lockpicking. That helps a lot.
Remember, even if you pick a lock of a door or chest etc. it is not stealing unless it say Steal ..
As Kabirbd mentioned, the main money source is combat spoils (looting corpses).
Stealth and lockpicking are skills to take into account, they come in handy.
Honestly, out of all the ways you could make money, stealing is probably the most kind. Your other options are murdering bandits and looting their corpses, after all.
Then I started Alchemy and I was easily able to get all the money from the Rattay vendors.
This was my money source in the beginning too, get the perk that levels up strength while picking.
Lockpocking ist very usefull, and you don't have to steal the stuff, you just pre-open their stuff for them.
