Best potion to apply to weapons?
I tried dollmaker and lullaby assuming they would paralyze enemy and put them to sleep but after some combat test I can't notice any effect at all.
So other than poison is there any other potion that's really useful to apply to weapons?

I think Bane is the best one, but you need to hit the enemy in the flesh for it to work, most high level enemies wear plate armor and full helmets and it's hard to hit through those.

When I played for the Merciful achievement, it was enough to make just 1 hit and then go back in guard and wait for the enemy to die.

Bane for melee weapons, dollmaker from what I've heard for arrows. Bane for that nice poison that takes out a large chunk of the enemy's life, dollmaker prevents them from sprinting, allowing you to run away and give you time to either heal yourself or pelt them with more arrows. Or it allows you to deal with fewer enemies by putting some distance between the ones you hit and the ones that can still run.

And here I thought the poisons only went into food items, bottles, or the cooking pots. Found no mention of applying bane to weapons, but yes for dollmaker. I'm not saying bane can't be used on weapons, but could only find the following...
EDIT: see bottom tho, seems the community contributors are confused as well.

Bane Uses
The Bane potion can also be applied to Drinking Water. A single potion can be used to poison a stack of 5 Drinking water without diluting the effects, providing a 5-for-1 deal. Poisoned Drinking water (with a Poison, or a Bane potion) can also be used to poison food pots with the same impact as directly applying poison.
Poisoned drinking water cannot be applied to weapons such as swords or arrows.
When clearing out a Bandit camp, simply sneak in at night and put Bane potion into their cooking pot or wineskin. Around 7 AM, your enemies will wake up and consume the poison. They should all be dead within hours. https://kingdom-come-deliverance.fandom.com/wiki/Kingdom_Come:_Deliverance_potions

Bane Potion
Can be used to poison food pots and wine skins to great effect.
Notably useful for the Merciful achievement, since kills due to poisoning do not count as the player's. Generally less useful on Hardcore difficulty, where lack of visible cues make it unclear when poisoning has been proc'd on an NPC.

Bane Poison
Bane Poison (or Bane Potion) is a Potion in Kingdom Come Deliverance 2 (KCD 2). Bane Poison prevents running and reduces health. Potions are consumables items that provide various effects, these can be crafted or brewed by using an alchemy bench. Reduces health by 110, resulting in certain death. Decreases health faster if good quality. More suitable for poisoning cooking pots than applying to weapons.

Dollmaker Uses
The Dollmaker potion can also be applied to Drinking Water. A single potion can be used to poison a stack of 5 Drinking water without diluting the effects, providing a 5-for-1 deal. Poisoned Drinking water (with a Poison, Bane, or Dollmaker potion) can also be used to poison food pots with the same impact as directly applying poison. However, it's better to use Dollmaker potions on weapons, and use other poisons for food pots. Poisoned drinking water cannot be applied to weapons such as swords or arrows. The Dollmaker potion doesn't just prevent sprinting, but it also prevents jogging. Very useful against pursuing enemies, if the arrows are tipped with the poison. https://kingdom-come-deliverance.fandom.com/wiki/Kingdom_Come:_Deliverance_potions

EDIT:
All potions can be applied to a weapon for a number of uses, which can be increased with the perk Venomous Blade....

Dollmaker is best for weapons

enemies cannot move quickly and must walk - provides significant crowd control

... and prevents anyone from "running" away

all characters get a save vs. the effects of poison, so all poisons can be unreliable

Bane, however, has such a slow tick rate that you still must maintain the same battle readiness since enemies that have been "poisoned" will fight right up until they die or walk away - no change to the battle mechanic, better off to keep swinging
