How not to be a poacher?

Hey there!
I'm trying to complete these sidequests with food supplies, but when I go hunt on a hare or anything else and hand over the meat to a questgiver, my reputation is lost each time.
So, I guess I'm doing something wrong?

Don't worry too much about the small reputation loss, or alternatively don't do the poaching! I've been doing the 'Beggar's feast' quests (hardcore) and get the 'reputation gained (refugees probably) and reputation lost (guards/traders?)' every time I deliver. Then for a couple of days I get regularly searched by the guards and treated somewhat rudely by certain traders. I make sure not to carry any stolen items into Rattay for a while and just surrender and let them search me. When I check the reputation tab, there's no serious damage and they soon go back to normal with me.

Yes, entirely; as mentioned above, you must complete Baptism of Fire before the Hare Hunt quest is available. Baptism of Fire comes after you do the questline Mysterious Ways, all the way past the point where you have scouted Pribyslavitz, which will trigger the Baptism of Fire quest.

If you have the DLC "From the Ashes", you will get Sir Divish's permission to hunt in the woods of Talmberg as part of being responsible for rebuilding Prybislavitz. So even if you'd fail or don't want to be the Master Huntsman of Talmberg, you'll be able to get game without poaching that way.

Yeah, there's a conflict of loyalties / ethics when you become the Master Huntsman for Divish--you're already Sir Radzig's man. Ancient wisdom: "No man can have two masters."

Your technically not a poacher when doing Sir Hans hunting quest, so I decided to go a little overboard with my bunny hunting. I guess I won.

First of all, please Internet stop spelling this wrong. It's either "you are" or "you're" but stop writing "your" when using " you are". Call me a grammar na$i all day if you want to, I am certainly not perfect and english is not my first language, but this is driving me mad on forums all over the place and I can't take it anymore without speaking out.

On topic, OP has the problem that he doesn't want to poach for the food supplying quests.
Since you have to deliver unspoiled food, this won't help. By the time Henry returns to Rattay, all hare meat will be spoiled.

There is the "Salty" hunting perk + the "Preserver" potions to help with that. Raw meat will spoil much slower and will still be considered as raw.

Yes, that's true. But I don't think anyone carries over 200 Preserver potions with them. And I'm not sure the "Salty" perk is enough in this particular case.

Since you have to deliver unspoiled food, this won't help. By the time Henry returns to Rattay, all hare meat will be spoiled.

You get both a reputation drop and a rep gain. You are helping one group by delivering the meat giving you a rep gain, but also breaking the law so you get a rep drop. You can either just not do the quest or just roll with it.
