And what mission/quest ?
In my experience, the game does not usually respawn NPCs that are killed - but i have heard that some NPCs will respawn after 14 in-game days, but i'm not certain.
For me, loading a previous (old) save is easiest.
The way the game is designed, with limited respawning, Stealth Killing isn't a good idea for dealing with NPCs - knockout is usually better.
Unless you are killing them because they awaken when they hear your crimes... in this case, my guess is you are trying to pickpocket sleeping NPCs - and in this case, running is best.
Unfortunately, pickpocketing sleeping NPCs is very much more difficult than pickpocketing a NPC that is walking, while you crouch behind them. Very odd, but true for the game.
I like to train pickpocketing on the road from the river to Rattay - where NPCs are going to gather water - no guards nearby, except at gate, and very few people to witness - lots of practice and you can run from the guards if you are noticed. A few hundred groschen can be found here..
