Longswords are mid-game weapons (so are axes).
Maces are the late-game weapons. :-)
Short swords use agility - all the others use strength. Also, strength is a lot easier to level than agility. I've always just relied on upping my strength and just powering thru my opponents. Never concerned myself with combo's and I've done more than fine.
The first hit is guaranteed if you attack immediately after a master strike, clinch or another combo so it is possible to chain combos.
Whenever you learn during training isn't working while fighting, except master strikes or blocking. But most of what you're taught only works as intended in the arena because Bernard actually lets you hit him. Which is quite different during free fights with him.
the only case where henry can't guarantee a hit after clinch, master strike or combo is if the enemy is too far away (some combos or master strikes throw them too far) or Henry stats are so low that his attacks aren't fast enough to hit them during the short period when they can be hit.
