--Theresa's part of 'A Woman's Lot' (the other part is 'Madonna of Sasau') takes you out of the main story and tells about the day before the raid and the raid itself from Theresa's perspective.Her story is the only one that isn't played along with the main story and can be played at any time.
--'Rattay Tourney' is an ongoing DLC that happens every week. It's an opportunity to fight 1v1 and win a special suit of armour, 1 piece with each win. If you get a message that it is happening you can chose not to go. If you don't you will get a 'failed quest' notice. Don't worry, there will be another next week and, if you are in a timed quest you need to focus on that.
--'Band of Bastards' is available later in the game and is combat heavy. It's lots of fun and has a great reward for finishing it.
--'The Amorous Adventures of Sir Hans Capon' appears later in the game. You MUST complete this DLC to finish the game.
--'Treasures of the Past' has 5 treasure maps with special, but not spectacular armour and other goodies. It is ongoing throughout the game.
--'From the Ashes' is available after you have completed 'Baptism of Fire' and is a town building venture. Don't start this until you have around 40K groshen. I usually have more but that is personal preference.
--There is a DLC associated with the Rattay Tourney concerning a cheating fighter. It involves the blacksmith in Samopesh.

A Woman's Lot would fit nicely into having completed the game - visit Theresa
Band of Bastards would fit nicely as well, but you need to find Radzig to start this, and i couldn't find him after i actually finished the main quest, so oops.
From the Ashes is a really nice option since it can be viewed as giving an alternative ending - visit Divish
The Rattay Tourney would fit nicely, but to get the most benefit of this you really should do it multiple times during the game (pieces of armor provided as reward) - just talk to guy sitting on bench near arena (he can skip time too)
The Amorous Adventures is interesting to play once (fetch quests), but i prefer to play this in the middle of the game - this is all assigned by Hans
The true ending of the game is sort of a drop from a cliff, where Henry and Hans literally ride off in the sunset - and there is no game playing after this event.
But another playthrough always awaits - and figuring out the best order for side quests and DLC is one of my favorite pastimes - have fun
Both will work, but i think the last is the best idea: start a new playthrough...
