And I still have no consequence either way, unless someone else sees me do it. The point is that stealth knockout/kill makes pickpocket useless.

Pickpocket is very nice and useful, however you have to be patient very early in the game and first build up your stats.
Be very mindful of your stats and how that plays a role into "sneaking" and "noise" ~ This can all easily change based on equipped clothing/armor and alike. You also have potions you can find, buy or craft to lower noise and increase sneak.
There are ways to make everything easy, but at the same time, if you mess up, its game over.
The Reputation reduction happens during sleep, and isn't announced, so it's not real noticeable
this is the normal way the game applies consequences for criminal acts of assault
for example, you can knockout folk during the Skalitz prologue without "immediate" consequence (unless u r seen) - and your Reputation when arriving in Rattay will reflect these criminal acts
thus it is possible to start in Rattay with a -99 Reputation, and Henry's starting Reputation in Rattay is used to set Henry's Reputation with individual traders and some citizens throughout the game, (not just Rattay), which can make playing the game more difficult
Some larger ones will have a break-down of the Rep. such as...
> Villagers
> Traders
> Guards

So no, it does not make everything auto drop for every instance of "law breaking" or "dishonor" actions. It depends on what you did and who it affected overall. Now sure if it drops among the Villagers and Military Guards by alot, this can affect Traders. Traders each have their own though. Each Trader can be affected by how you deal with them. For example if you go to Checkout with a Trader and then do Bargain (whatever words they actually use for this) and then you keep asking for a too low of a price (aka; low balling them) over and over, your Rep with them will drop. You usually will always want to try and bargain and very slightly less price and see if they will accept it, it helps if you are successful. If rep with a trader drops below 60-70% be more careful overall. You can increase this with a trader more easily when you have more money. Then when you go to buy stuff, do Bargain and actually give them slightly above the asking price. Doing that a few times can raise the Rep. with that Trader. Lower Rep with Traders affects your the buy and sell prices for anything that will accept from you; and not all Traders will accept the same kinds of items. Some only accept "Armour" items for example, while some only deal with "Food" items.
Knock-out is basically always a crime. Where as Pickpocket is only a crime if you fail and/or caught.
Something along those lines.
All we see in Player Stats are red lines and it's not clear to me how much of an actual increase happens after various moments.
