The KCD map is not that big, don't fast travel and you will see 90% of the ambushes ahead of you, then just ride around them or engage on your terms. That simple.

being pulled off ur horse, and being "tackled" while running away is very disorienting in the game, as the player waits for the camera to stop spinning and wobbling.
add to this the fact that the game's "camera lock" has already rubber-banded you to one of ur opponents, so you must now also deal with a sideways gravitational pull, as the rubber band holds you back.

but the player must persevere - keep pressing and repressing (and holding) the <Shift> key to help break the camera lock (you break camera lock using shift+fwd, which is "run").
so, keep trying to run away even with the camera wobbling - do you best to turn and run in a useful direction - but never stop trying to run.
keep running until ur stamina is gone - jog for a 1 or 2 count to replenish stamina - then Run again - just like the Horse chase when riding for Talmberg from Skalitz.
and while weight might matter - your stamina matters waaayyy more - stamina is from vitality, and grind vitality by hunting (and running and jumping everywhere).
Running speed is determined by what you wear, how much you carry and Agility. How long you can run for is Stamina, apart from a healthy lifestyle (eat, drink, sleep) it comes from Vitality (someone else said that I noticed). How much you can carry comes from Strength and some perks.
Agility comes from using weapons which have an Agility level requirement rather than Strength. Running, going for an early morning sprint really can help.
Strength comes from using weapons with a Strength requirement. Picking flowers (Herbalist) has a perk called "Leg day" (hope I have the name right), as you pick flowers you gain strength but it is slow and perhaps boring.
Learn to read. There are books to increase stats like Agility.
Overall best thing. Learn to fight, both with Agility and Strength based weapons. If you aren't sure how to see which weapons are which it is the first thing in the details as a requirement.
The wiki says if you get hit when wearing armour you lose some stamina. Do what you like with that gem of knowledge.
Wear a Cuman helmet, they are more aerodynamic. Keep your hair very short. Drop your weapon, they will stop to pick it up, I made that one up but worth a go. Join the Cumans, I have never seen one getting caught by a bandit. Marry a rabbit.
I usually reload though, because after doing something like that, it just feels too out-of-character to continue.
