I say just play the game. It's made for casual audience, you don't need to make it any more easier.
There are some annoying bugs, the worst offender is your horse doing a 180 turn randomly when you open map for example, but I'm not seeing any mods that fix it. Most of the mods are simply removing mechanics from the game, making it duller.
I think you should try the game as intended first, and then decide if you want any mods for your 2nd playthrough. I can also give you an advice to avoid activities related to carrying large volumes of goods, like robbing tanners early game. They could make it fun to steall all the dog hides lying around, but it's not viable. It's a waste of time and locked down fast travel makes it unbearable. Crazy how they made thiefs lives so miserable. If you want to engage in this activity, I guess you will need a mod that increases your carry weight. But I would simply advise against it. And bushes. Never go into bushes.

Also i really don't recommend using the unlimited saves mod, this takes away an important mechanic of the game which is to prevent you from save scumming, it's no surprise this is the most downloaded mod out there :P. The vanilla save system forces you to think about when and where you save, also the alchoholic part will prevent you from saving too much, it really is a great system that adds challenge to the game.
Seriously, play it and see. I have used a few mods and I have found it is safe to add and remove them mid playthrough without having any crashes etc unlike Bethesda games for example. Start playing and add one if you feel you need it.
That said there is 1 mod I always use, "Bushes Collision Remover" https://www.nexusmods.com/kingdomcomedeliverance/mods/591 but it's just a personal quality of life thing.
1) Restoring the reticle when using the bow. If you actually want to use the bow to any degree of effectiveness, you need this.
2) Carry Weight mods. By default, Harry is incapable actually carrying the weight of a full kit, making looting or hunting an absolute chore as you punt between the horse and the nearest merchants in the hope that the loot from your extremely challenging fight doesn't despawn before you get back. I usually crank it up so high that its effectively unlimited so I don't need to bother or worry about inventory capacity or weight limits. Open world type games having unlimited inventories via a stash is something I strongly approve of.
3) Unlocked saving. Especially for a first playthrough, where you don't know which quests are timed or which fights are going to be absurdly hard. Giving yourself the option to save at your pleasure means you won't have to replay potentially hours of gameplay. Its valuable to save before every attempt to fast travel due to the chance of random encounters spawning impossible fights for Henry. Few things are as frustrating as loosing both hours of gameplay as well as acquired loot is getting effectively ambushed by impossible opponents when you attempt to fast travel.
4) Rich merchants. Slightly less essential than the above, but most of the ingame merchants are stupidly broke by default. Bumping this up lets you actually unload the loot.
While I enjoy various visual improvement mods, I wouldn't consider them essential to address defects with the core game. On the PC, KCD still looks absolutely amazing at its highest settings.
It's not about cheating per se but it's a great debugging tool. The game is perfectly playable but not free of bugs. You can get softlocked by getting stuck in the terrain for example, and this mods let's you teleport out.
I'd add bow reticle to that list, but tbh I actually enjoy the herb picking animation. I find it quite immersive, just like having to mix potions one ingredient at a time.

You might look into making it harder a bit so that you do not spam masterstrike all the time as an OP win button
One of the "stay clean longer" mods so you don't need a bath after riding from the mill into town.
First Person Herb picking keeps the animations intact but doesn't throw you into 3rd person with each herb picked.
Early Birds - most people's clocks in this age is the position of the sun. Peasants getting up at 8? Seriously?
Bush Collision Remover. After getting so stuck in bushes you can't get out again for the 6th time was it for me.
