Second, in my own experience, the Rattay Tourney isn't something to go into with the expectation of winning it right away. It's repeatable, and occurs once every seven in-game days. So even if you lose it once, you can just go through it again the next time it starts. Whatever skill improvements you gain from attempting it are also permanent, so even trying and losing is to your benefit. TBH, I feel that it's best regarded as a teaching tool. You'll win it eventually, but you gotta train up to that first.
Just do it for experience, no need to win if it's too complicated on start.
If you are struggling, just go in for clinchs all the time, back the NPC into one of the four corners and go in for a free hit every time, aim for the head. It works most of the time, more so if you go maces. You can also just master strike spam but you gotta bait the npc in for an attack, where as the corner strat is more proactive. I only did 5 tourneys, simply for the armor. Also make sure to bet on yourself every time with the miller outside of Rattay, huge wins, roughly about 5k gold with the winnings from the tourney itself.
As for winning it’s actually really easy once you level up and get master strikes asap. Once you have master strikes the tourney will be a breeze. Even if you fail it’s a great way to train your skills with no consequences, especially on hardcore.
