Just ensure that your noise stat is low and similarly for vis/con. It is simple is to go with dark cloth only, it does not have to be pristine.
Longer description of Knockout mechanic (controls for PC):
1. Crouch behind the target (maneuver and press <C>)
there is no "how well hidden" roll-up statistic provided to the player, so the player must develop their own understanding of a "how well hidden" statistic based on circumstance, clothing, skill level, etc. Fortunately, the game provides for some basic laws of physics, like how Henry is more quiet when standing still, than crouch-walking.
2. If Henry is in the right position, a popup control option will appear in the bottom right of the screen for "Knock out <F>". A quick touch of the <F> key will roll the dice for the skill contest and begin the decided animation.
This skill contest for "Knock out" seems to be mostly related to my conceptual "how well hidden" and Henry's Stealth skill level, and quite possibly Strength and/or Agility, (others?).
The random nature (the die roll) of the skill contest is obvious if you save scum.
as a side note for newer players, the game does have some small quest bugs, and buggy behavior can definitely be caused by mass knockout/killings, so save early and save often:
