The sooner you can level it up the better.--Leg day gives you a head start.
Leg Day is grabbed asap.
The Horsenip one is very useful too - a couple more points in courage for your horse can really make a difference.
I've managed to get to herb-picking level 18.5 in Skalitz and it definitely helps with combat due to the strength boost.

I had level 18 in herbalism (long after Skalitz) before I discovered the no animation herbalism mod. It's a fantastic time saver. It just removed the 3rd person animation view for a really quick 1st person hand gesture.

Yeah I've had it for almost as long as I've had the game (over 2 years). Without the mod, I doubt I'd have the patience to get to level 10 in herbalism.
If you are okay with grinding, training with Bernard is much more efficient, since you level your combat skills as well.
Personally, as soon as I got my Charisma and Vitality bonuses, I was done with Herbalism, and that was still in prologue.
When you have next to nothing a hundred groschen can really open up some possibilities. It will buy you potions such as Saviour Schnapps and the poison antidote, it will buy you food and lodging and even pay for tuition in Uzhitz for learning how to read. And that will lead to making potions yourself to sell for even more gr.. And reading is a critical skill in this game.
There are fields of wormwood north east of Rattay. Lots of belladonna on the way to Ledetchko. Esp. in normal mode, they bring pretty good prices.
Picking herbs is relatively easy and safe way to level up strength, and money and explore the map.
It's what a real-life teenage orphan with no home and no other means of support would do.

That's insane XD I can't believe you spent that much time in the prologue picking herbs (since you can't increase their value via alchemy - or level it). During my hardcore run (as it was my second playthrough) I was out of Skalitz in less than 30 minutes.
You can level your strength a lot faster elsewhere, and pick more useful herbs in other places (like Rattay). Combat training in Rattay would be much more efficient... and level the weapons simultaneously... and level vitality.
But if you enjoy spending hours picking herbs for little to almost no gain, you go on enjoying it!
After leaving Skalitz, the worldly danger and learning curve increase dramatically so it's some times a good idea to grind some skills in Skalitz so that you hit the ground running when you leave.... plus I some times prefer to take my time rather than speed-running through the game - for me it's about the journey; not the destination. I basically grind in Skalitz until I become bored, which honestly doesn't take too long.
Herb picking is a boring task so you might as well get it out of the way in Skalitz so that the leg day perk is available to you ASAP. Aside from increasing the herbalism skill, those herbs can then be sold which gains money and increases reputation as well as speech or you can simply store all your herbs in the chest at Henry's family home for later. That chest and it's contents remain intact after the Skalitz raid and can be accessed later after you wake up at the Mill (although it's not connected to your global chest).
There are lots of other skills which can be levelled up in Skalitz depending on what kind of character you want to play from the get-go. You can lockpick, repair weapons, punch cows, stab sheep with axes, maces and swords and you can even get a head-start with archery by practising on sheep... although in order to get a bow and arrows you have to subdue a guard which could start you down a dark path. You can leave Skalitz at a respectful level in many traits and skills and it doesn't really take all that long in the grand scheme of things. There is more than one way to play the game after all.
