Hardcore combat is noticeably tougher - so more challenging, i suppose.
In HC Mode. you have to select at least 2 debuffs at the start, but there is an achievement for taking them all.
Most difficult thing for me in HC Mode is that you lose the Compass and the self-icon on the map - so the only way to know where u r and which way to go is by your own memory of location and watching the sun angle (unless it's raining, then u just guess).
It's an interesting way to play, and not for everyone - but some folks seem to enjoy it.
I've been playing only HC for the past 1000+ game hours, but i mod the map to Normal Map just to make life easier.
Not everybody likes it and they find it tedious or annoying. It's not for everybody. Which is fine, just stick to normal mode. You're not losing out on much.
It's a pain but doable.
That said, I don't think I'm telling anyone anything new but I've found that if you have Mutt, you can make him stay... at the edge of the woods, for instance... and you'll always have a marker on your UI that tells you where he is. So you don't really have to get lost in the woods.
Don't know what the range is but his image seems to get smaller the farther away from him you get.
I toyed with the idea of making this run on Normal but in the end I decided I couldn't go back.
I would suggest learning on normal and having fun on hardcore later.
On hardcore, attacks deal more damage - that means you're more fragile but so are your enemies. If you're really good at disjointing attacks and avoiding damage, you'll actually be more of a threat at lower levels
