Total lack of Chainmail slot options?

Am I understanding this correctly - there are only 3 leg chainmails (one of which is really ugly padding) and a small handful of chest chainmail?

Not sure what you mean by 'lack of slot options'. There is a chain slot for the head, chest and legs. They are layered with cloth and plate..

What more did you expect?

There are at least 4 items which equip to the leg flexible armour slot (one maille chausses and three gambseon chausses), 16 maille hauberk to the body flexible armour slot - plus a number of the cotehardie and similar civilian mid layers (can be worn with collar or hood).
There are also numerous maille collars or coifs for the head slot.

I mostly meant the leg slot. I'm trying to make a light armor thief and there just aren't a lot of options for that on the legs. It's either no armor and just pants or padded armor that looks like it's moldy and rotting.

Repair them and hit the baths. Pick the top option to wash your clothes. See if they still look rotten.

Yeah I've already been through that. They stay clean for about 3 minutes. Might be my biggest complaint so far. Which is high praise I guess.

Think there is a mod on Nexus that changes how fast you get dirty.

I don't mind how fast things get dirty in terms of the stat debuff on the items themselves. It's just that the visuals don't exactly line up with that.

Duno what else to suggest then. Didn't have chain exposed much myself. Either it wasn't equipped for stealth or covered with plate.

If youre going with stealth, then just forget about plate armor. For the legs i'd recommend just the black hose, with nothing on top. Dark saxon gambersome for chest. Leather gloves, leather boots, black hood, dark padded coif. This'll give you around 16 visibility, 18 conspic. and 0-3 noise.

You can still wear chainmail if have the light armour perk. Just no plate. I think there is one set of full arm vambraces that work as well with a light armour. If you have the perk it will show up at the bottom of the screen.
