Just be aware of the "Stolen" marker, so a curious guard doesn't find them on you, take them away, and charge you for a crime.

Note that Henry's skill in the dice game is also biased by Agility skill - game becomes less biased toward NPC as Henry's Agility increases (dice game is initially biased against Henry).

Until you have a nice set consisting of the above dice, the Odd Die isn't bad either but you have 33% chance of throwing a 3 which is useless. Still, it's definitely better than regular dice.
Also, there is a bug that (some?) stolen dice are marked 'stolen' forever. Easy solution: sell them to a miller, then buy them back from him. Problem solved.
Quickest cash grab is looting corpses and selling the loot (mainly top tier gear). Tailors buy armor and resell nightly, so they have more money the following day. Apothecary in Rattay buys everything and also resells nightly. Although robbing corpses is not honorable.
Poaching (hunting game and selling it in town) is also lucrative - Huntsman in Rattay resells nightly and buys everything. Although poaching is not lawful.
Alchemy (making potions) can also be lucrative, and is lawful and honorable.
