How do i see enemy health?

Is there some hidden way to see it somewhere? or do i have to use visual cues to see?

It's not hidden, it's the tiny bar on left side of your HP/Stamina bar. When you ride horse it's green = horse stamina. If you fight it shows your foe's hp.

It's here. Right now it shows horse stamina because I'm on my horse. But when you're in combat it will change to the enemy's health bar.

On HC mode you have no clue at all. Be forewarned.

I didn't notice it either until after 70 hours. I actually liked not knowing enemy health, part of the reason I'm definitely going HC after this.
