In hardcore I was able to beat him by chaining hits against him, not getting into a clinch (so stay the right distance away), and blocking or retreating if being hit was inevitable. Chaining hits is especially important. You've got to run him out of stamina before he starts taking damage so if you land a hit or two, be absolutely relentless and don't stop hitting him until you have to. Manage your stamina, jab him to get started landing hits (especially if he's in the middle of throwing a slower punch), put your weight into your strikes... just generally use good KCD combat practices. It might take a few tries but you'll get it eventually.
All that said, waiting to really learn combat until you're training against Bernard might be a better use of your time. There are plenty of other ways to deal with Kunesh, which I'm sure you can find on your favorite search engine.
I doing a run on normal and completly sidestepped that kunesh-thing. No need to start waving your fists around (did it first playthrough though). Tried talking first, didnt go and went back like a ♥♥♥♥♥ to cry about it to dad, he then gave me more money. Did get all my money through throwing dice anyway^^
Besides you can meet him afterward and he wont be equally pissed at you.
