Regarding pickpocketing keys off of people, or looting them off dead bodies, they will say "door key" vs. "chest key" in the inventory screen. But I know of no way to show such distinction while attempting the pickpocketing.
edit: simple rule if an item in your inventory or on horse has red hand, it can be confiscated. guards search your horse (saddle) as well so be warned. the only safe place to clean stolen mark is chests in your rented inn rooms or rattay mill.
