Oh and, unnistall the game because of something you thought it was a quest, sounds too risky. Maybe this isn't your game.
I found the Theresa stuff to be quite a nice change of pace, and there's a ton of backfill to the future storylines which I found to be quite clever and entertaining. If you want to finish quicker................... spoiler alert................ be sure to purchase a whole lot of bandages BEFORE the Cumans attack. Trust me.
It's worth it just to get the dog, imho.
There's also the Johanka questline, which certainly is not boring and is substantially longer than Theresa's. If anything, I found it to be way too intense at the end (if you've played it you know what I'm talking about).
I don't think you got quite a firm answer, OP, so here's a judgement-free one- unfortunately, the only method I'm aware of is to load a previous save prior to taking the quest. You can still get the dog without doing the quest.
Play any way you like, it's fine, your money, your game. There is one spoiler I'd like to share, though:
At the end of Theresa's story, you'll be back at the mill as Henry and you'll be able to engage Theresa in some dialog - after this dialog, she bestows upon you a beautiful Skalitz shield. sort of a parting gift for listening to her story. It's a really nice shield, too, well done with the Skalitz crest. If you're amenable to enduring her story DLC, the shield I think is worth it, but that's entirely up to you, sir.

Depending on how far your proceeded through it though, it might be worth sticking it out and just finishing it for the reward.
Edit: I'll add, in terms of quest time, you can speed through it. It shines mainly from the interactions you can have with the Skalitz population for more background.
Dumbest reason to ever uninstall a game.
Could've just loaded your last save and ignored her quest.
