I noticed you're not wearing a hauberk or mail shirt under your armor, so it seems the gambeson will take a lot more damage from other attacks as well: the hauberk or mail tends to also diffuse damage before the gambeson does, so that's probably a contributing factor.
The combat jacket is the top layer so you can keep your gambeson equipped if you find the dark combat jacket out in the world: head up to Skalitz, there's a profusion of bandits up there, one of them will likely have one.
I'd also recommend having a spare tucked in your trunk, so if one gets torn up, you don't have to wear subpar cloth protection until your next visit to the tailor.

Yes and no. Padded armor by itself is surprisingly good against slashes, but behind mail/plate, it becomes blunt padding.
I remember that the Warhorse Gambeson seemed to be thrashed very quickly in my first playthrough, which isn't an issue early on bc the low value of the thing makes repair of some very good piece of kit costs literally less than a groschen.
