How to choke/knock out??

I keep hearing and seeing people talk about how they're stealthily knocking their foes unconcious, but I can't seem to find the button. (Obviously, I'm on PC)

several ways:

sneak up behind someone if they're standing, hit F.

if they're sleeping, crouch up to someone, hit F.

theres a UI indicator too

Well you need the skill under stealth first I think for knock out. I know 100% u need the skill for stealth kill for stealth lv 5

You crouch behind your target and press F to knockout.
When you're stealthy enough and have the perk Stealth Kill and a dagger in your inventory, you can outright murder them, if you want, hold F.

Is there a way to make sure it happens every time? I'm a 12 strength character and failed to knock out a wayfaring knight.

It might be affected by agility more-so than strength, not really sure.

I wonder if conspicuousness/noise has something to do with it as well.

I felt that my knock outs were more consistent when I was naked rather than in full plate. Could just be my imagination though. Without writing down the results it's just heresay.
