How do I fence expensive stuff?
Ok so I still have gear from the 'Nest of Vipers' battle, I picked up stuff from Tahlberg soldiers and it counted as stolen but theyre so expensive that I can't sell them to the millers and traders won't buy stolen goods either.

What do I do?

Hmmm you could try getting that "trustworthy middleman" perk from Speech. It makes traders less reluctant to buy your stolen goods.

Or just wait a few days. After that the stolen items will be set to "normal" and you can sell them to any merchant you want.

I know that but the items I'm keeping are expensive helmets at like 1.7k - 2k gold a piece so they dont lose their stolen tag.

You can trade them for lockpicks which are actually quite expensive and the fences have quite a lot of them, then trade the lockpicks to a general trader with enough gold.

I've been lugging around an 11lb halberd in my inventory ever since I got to Rattay, and I can't even store it, nor sell it :/

Sell him stuff regularly, tip him a little, wait a day or two to let him regain his wealth.

They all lose the stolen tag eventually.
Also have you tried selling them in places far away from where you stole them?

Not quite sure but I think the really expensive stuff still loses the tag after two weeks or something.

You can also try and store them in the Mill. There's a personal chest next to the beds. Useful for storing armour and such for a while. You can come back later and sell what is cleared.

I've done all of Pashak's missions, but I'm only up to the stealing 5 gambesons mission with the other miller so far.

Yeah for some reason halberds can't go in chests or saddlebags. I read somewhere that it isn't even supposed to be able to be in the player inventory. But yeah, I guess I could try a miller.
