where do i sell meat/hide and how much can you earn ?

Go to the tavern and cook all the meat it becomes legal now, you can sell it to whoever buys meat, so butcher ,tavern keeper, trader etc. The skins lose their illegal status over time so dump them in a chest and then sell them to a trader.

You can make a lot of money.

^ EIther that, or sell to a miller. There is also one guy at the "Inn in the Glaive" fast travel point (probably more of these in other places of the map) who makes you poach a specific animal.
