Report a translation problem
On my rig my character would not perform some combat manuvers/techniques at all (including "block"). It's all BS. While our "noob" character might be slow or clumsy at some things, NOT being able to do them at all (in addition to being weak and running our of endurence too quickly) is a poor judgement/coding call by the Devs.
Once you get to Rattqay, you can get more combat training which will help you "skill up" faster. Don't forget to apply skill perks when you see fit to get extra abilities or techniques within that skill.

Sidenote if you really want to beat the knight, you could still use an exploit to do so. If you unlock your combat target and swing, they won't block. Sprinting into him and swinging works too, for the same reason, and is extra effective if you got the Boar perk.
This ^. You don't get that skill until you spoken to Radzig, whom then tells you to go train with Bernard, who then teaches you the skill.
I guess I just figured since I had a shield equipped that it would be enough, but it really does make perfect sense, even if I was too aggravated to think of it earlier. Thanks so much everyone
