It happened to me in Sasau at a door entrance when I pressed E to open the door and there was an invisible guy who called the catchpole - cost me money to fix.

Another time, in Sasau, I got the pickpocket thing again. This time I rode out on my horse and didn't return for couple of days. All good.

In neither case did I actually pickpockey anyone - or attempt to

It has nothing to do with pickpocketing anyone. You can read about it in the crime and punishment entry in the codex. It simply means you have committed a crime in that area.

I got it for fast travelling through Rattay without a torch

I got it for travelling through Rattay without a torch as well. Which is absolutely ridiculous, I know it's illegal to ride through Rattay at night without a torch, but in this case I initiated a fast travel from far away during the daytime, it was night when I approached Rattay, and apparently Henry never bothered to take out his damn torch while traveling because I was then stopped by guards and subjected to a fine.

I mean, really? I don't have control over it and (as far as I know) I can't interrupt the fast travel sequence once it has started. This game is great overall but there are little things that make zero sense that me throw my hands up in confusion.

yeah there's many reasons. as in not having a torch and leaving town before you get arrested. My big problem is when I have a good horse and accidentally run someone over and killed them and never even realized it. knocking someone out and they saw you. just pay the fine, and it's fine

Give yourself up and redeem your honour or avoid it for at least month.
Wow if you have a few around more towns your going to need to spend a lot of time in jail as its the only way to redeem yoru honour.
What crimes are you doing to the locals?
As Henry you have to earn the trust of villagers being a stranger and of low class not a noble.
