You have to pay close attention to them, their weak spots, their position, etc. It's confusing and daunting until you learn it, and I haven't even learned it well. Try using a sword and shield instead of a long sword.
I don't know what part of the game main quest you are on, but you start out as underdog with no fighting skll whatsoever. Here are several vital points to learn in this game's fighting.
1) there 6 points to attack from (5 star sides and quick thrust). To have the best chance of landing a blow, you need to attack at the angle furthest away from your opponent's weapon/weapon's stance. For example if an enemy is doing an overhead chop, to make sure that he have the worst time to react to block and deflect is to make quick swing upwards from either left or right.
2) Dodging is very important. It consumes less stamina than parries. You will see it in your star Icon highlighted as green shild and requires careful timing. either press left or right quickly as soon as an enemy is taking swing at you. If done right, you could basically blindside your opponents with no chance of retaliation. Almost any quick attack afte dodge will score a hit.
3) Parrying (blocking an attack and then quickly attacking) is essential against opponents who are way better than you. Also requires timing when you are about to get hit and you see green shield icon appearing in the reticle star, quickly tap Q to block then attack. If done right you will not only score a hit, but also sent your opponent off balance.
4) Early in game do not use left click attacks often. They are slow and unreliable unless used in combination with quick strikes of right click attacks.
5) Quick hits are better than one stong hit.
6) if fighting against two or more opponents IT IS ESSENTIAL TO PEG one of your opponents between the other. Just like in real life, if you move to the side, causing other oppoent(s) not being able to get to you since thier buddy is in the way and have to run circles around to tag you. One of the best fights I found when saving the guy tied up in the forest between one guy with sword and shield and his archer buddy. I went for archer first after scoring arrow hit to the chest of the swordsman. The archer tried repeatedly to use his bow while being stabbed to the face with me strafing him, every time his swordsman buddy tried to get to me (i would just go to the opposite circle).
7) Do not just rely on swordsmanship. You simply aren't good enough early in game. The best way to deal with enemies I found is combination. For example for Ginger quest at the bandit camp, before engaging axeman bandit, I strangled his buddy, then ran away to the nearest shallow cliff, jumped off while dumbstruck axeman kept looking at me and yelling obscenities. I kept using him as pincushion. He finally jumped down clutching to his stomach, bleeding as I promptly stabbed him in the gut.
People like this are the real reason why games become more casual/easy.
The first thing you want to do is do all the training with the guy by the arena in Rattay.
Next be more defensive, let them attack and then counter.
other than that keep in mind that :
HOLDING Q is perma block mode, you will parry everything that isnt a combo or feint
you can parry when the shield in the middle IS NOT "glowing"
weapons do matter rather than being preferance
if you cant seem to get good at fighting, get a durable weapon (stalwart - shortsword, fearnot - longsword, or the metal battle axe (has 30 in every damage type and decent durability)) and simply block, dodge, and push your body into theirs to grind their weapon durability away until
you can beat their nullified weapon even while being pummeled
hunt. hunt. and hunt. level your bow as much as you can stand by hunting bunnies, arrows can be retrieved if you pay attention and dont chase before picking up (later youll have hundreds anyway) but before that, bows are pretty worthless and rely on luck rather than skill
