Nothing else compares to this for it still counts as full combat yet you can do it nearly indefinetly due to your armor absorbing everything if you dont completly exhaust.
Moving bodies, attacking in melee and normal blocking will increase strength most often
Timed dodges/parries, archery, and using weapons like shortswords or sabres can increase agility
Running (sprinting), vaulting over fences, jumping, and surviving blows in combat will level vitality. It's easily the slowest leveling stat, but it honestly doesn't do a lot.
Literally just talking to people increases speech. I had a speech skill increase from one of the lines Henry speaks to another character outside of face to face dialogue, even. I'd imagine persuasion checks level it the most.

Charisma is mostly about being clean and wearing nice clothes, without anything covering said clothes from view (armor covering clothing negates the charisma).
Speech goes up from talking to people.
I don't know if Speed changes, but I'm guessing some gear affects it.
Visibility, Conspicuousness, and Noise are all based on gear.
Given vitality is losing stamina we can count that for combat too.
As for haggling, I got a level up by just initiating a haggle so it may be irrelevant how well you do. Just always haggle and go one or two steps down unless you want to drive a hard bargain or the value is to small anyway.
