Don't know if this will help your specific problem, but i have read on several forums that progressing the main quest line can sometimes solve a lot of sidequest bugs.

So I did what a gentleman in the medieval times do, I sneak up behind each of them and knocked them out. Then I hid behind a bush a bit far from them and waited. As soon as I'm done waiting, all of them are awake again, and they started to gather at the starting location. Then I just followed them and started the quest normally.
Also did the quest at two completely different times in the mainquest - one time very early, after talking to father Godwin - the other time relatively late - but before nest of vipers, but i just picked it up and did a couple of quests in that area later - and i didn´t pick it up at father Godwin, but at the herb woman. Never had an issue. Perhaps this specific problem was patched out? Or do You mean You got spotted when they were moving there? I don´t know about that, because it starts to get dark and they have torches - it´s easy to keep a bigger distance and see them. The first time i didn´t know how close i could get after they were at their place - i was a bit surprised to get spotted.
Once you've figured out when they'll make their trip, you may have to wait around for several hours until they begin to move.
The women eventually converge on the road leading into the forest from three different parts of town.
You need to stay back and out of sight until they've all caught up with each other and are in a single group.
After that you should close the distance a bit, but watch out, you're very visible when walking on the road.
On the right-hand side of the road there's some tall grass and obstacles that you can put between you and them so they don't see you while you close the distance.
Just before they enter the forest they'll stop and have a conversation. You'll want to be close enough to hear this conversation, but if you get too close they'll realize you're there and the quest will be scrubbed.
If they don't realize you're there, you'll need to stalk them into the forest, hiding behind trees as you move along.
This is the easy and most satisfying part of the quest.
