The only benefit I can see is that if you're stopped by enemies, you can just blow past them on your horse. Just be careful of archers.
Look at your XP for Horsemanship before and after fast traveling on horseback.
I can't do it anymore because I have Horsemanship maxed out
Hunting appears to be the fastest way to rank up Vitality though. I suppose it's because the game doesn't differentiate whether you're in a battle against a bandit or a hare.
I tried fast traveling both while mounted and unmounted. Neither horsemanship nor vitality increased during travels.
