You have to avoid over extending, attacking to exhaustion and then being in distance to be hit.
An alternative is to deliver successful attacks in sequence without being hit, these can be over some time, and don't suppress the stamina buffer, but with 'chain strikes' do boost the attack power.
The four governors of the real fight (Judgement, distance, timing and place) are helpful within the context of the game. A dodge to your right followed by an attack gives you protection, an opening and (if you mess up a little) passive protection from shields against the attack which lands. (Dodging backwards robs you of the ability to attack (poor distance, poor place)).
Devices only require two hits, with the third attack of three automatically landing (alt 3 of 4). Some of these are rather easy to deliver (e.g. longsword Fehler). Each opponent has a 'personality' to their combat abilities, and I start by feeling out this with conservative actions focussed mostly on not being hit (at least repeatedly - some single hits are unavoidable - but you should never be hit many times in a row).
Once I have an idea of the opponent's ability (and my current health status) I choose to either press the offence or fight conservatively looking for an opportunity to take the initiative and fight offensively.
This is part character development (physical skills enhance your ability to perform the actions you choose) and player skill (or at least understanding of the tools and how and when to use them) (Judgement of the four Governors).
The tourney opponents are supposed to be middling to high level opponents, not trivial for a middling level Henry's physical abilities and his players judgement and decision making. It is entirely doable for very good judgement even at the earliest point you can take it though, even if rather harder than it will be later.
(Importantly though is that you have to build your palette of skills to be more than just attack, parry, dodge. That is not quite enough to be effective. Combination attacks or devices are very helpful (if difficult to pull off initially until you figure out how the attack angles flow with and without enemy interference), and parry-riposte and master-strikes are vital to learn.
You can get these *before* "The Prey" if you follow the advice given by Bernard literally and with enthusiasm (The name of the training quest is a hint to success in combat)
Now what I do to win is, I most of the time try to get close and press F for clinch or to shove the enemy, then I get close and do a upper attack to hit his head. Or i let him get close and I press Q for defense on the right time so Henry can perform his auto counter attack which does a lot of damage. I am not successful in doing combo with this guys as they always counter me, so i just feint an attack and move back, get close and press F and get close again while he is unbalanced for head attack. stab stab. Same style with shield. I always get damaged alot when opponent has shield and performs that rotating counter against me.
And drink up some potions for battle or defense increase if u have too.
Thats the reason right there.
Another question? Did you learn master strikes yet? If not then it is highly doubtful you will even be able to cheese your way to win the tournament.
As both the second and the third opponents in the tournament can master strike you even if you havent learned master strikes yet.
And thats why when they countered you it took your health down so much. You said you hit him with 3-4 hits. which means your stamina is low. So all the damage you received from his counter attacking(which was most likely him master striking you. All that damage likely went straight to your health.
Here is a trick you can do that while i doubt it would allow you to beat them given your stats. I wouldnt totally rule it out. As you could get lucky.
Grapple them.
If you dont know what grappling is. Grappling them is going all the way close to them as you can and clicking (for me its the scroll wheel) this will make you grapple with them.
It looks like both of your weapons are clashed together. Then immediatly pushing an attack. Slash attack does a strong grapple pushing them away. While stab attack does a weaker grapple pushing them away still but not as far as slash attack.
This will give you a chance to get a hit in or two.
cheese it. Repeatedly grappling them will restrict what the computer will do.
Also do it in a corner and keep the opponent in a corner.
Like i said with your stats i doubt even this cheesing tactic will allow you to win the tournament. But its possible.
Update: Just won the final 2-0! Wow, the master strike sure helped out massively, that was the gamechanger.. and the combos were easier to land because of it.

In fairness, between the tourney attempts my stats barely changed! Just learnt the master strike and a couple of combos and that totally swung it!
