I have also noticed that certain steps in the main quest line cause ALL traders in the game to reset to their original money and inventory - and this may also happen after a few days.
So, perhaps just wait a few days or progress some quests ?
The best way i have found to make steady money and avoid this situation, is by farming gear along the roads and in Skalitz, and selling to the Tailors - they Resell the items you sell to them nightly, and their available gold goes up. Then i steal their Gold (leaving a few thousand for next time).
For example, if i sell them goods for 4000 g - the next morning they will have resold all that stuff and now have more like 12,000 g - i then steal 8,000 g. And Groschen is never marked as stolen. Ez-Pz
The Blacksmiths also resell in a couple days, but the Armorsmith and Weaponsmith seem to take ~4 days to resell.
Almost all shopkeepers have a Chest somewhere that contains their Groschen - finding it can be difficult, but the Armorsmiths, Weaponsmiths, and Tailors keep their groschen with their physical inventory - you just have to find the right container.
Wait what? You can pick very hard locks with luck of the drunk?
Agree with the Archery advice: I'm still in the Prologue, leveled up my Archery to 10 shooting sheeps in the starting village to earn money, and in the Run! quest, I was able to one-shot all the Cumans by shooting them in the face. Now I'm wandering around collecting Cuman equipment, but not sure how I'm going to store them to sell later after this quest!
Not all "deer hunting spots" are created equal - and you need to go near ambush sites to get to some, but the area where Hans Capon goes is easy to get to and passes no ambush sites. I stop at the Inn or Uhzitz for the night - and then head there early in the AM - harvest deer and rabbit - and run back to Rattay for the afternoon (raw food spoils fast). No need for heavy armor - no ambushes as long as you stay on main roads. By the time you get back to Rattay - all poaches food is clean. You can also cook poached food to clean it, but it is not necessary since it clears so fast.

So I went to the one Inn that is in the village outside the Talmberg castle, paid the Innkeeper 175 for "several nights" and he told me the "bed" is up on the loft. Found the bed (it's just a bench with some fur on it) and confirmed I could sleep there, but there is no chest to store my stuff as I was expecting. Am I missing something here?
That was the answer! Thank you! Turns out there are two lofts and I found the 2nd one with a proper bed and a trunk that opened without me having to pick the lock. So while I'm still in the Prologue, I can store all my loot there, go and bury my parents and when I get to Rattay that trunk will have my loot stored here, right?
