I added the DLC from the beginning, so i dont know the game without the DLC, but as far as "play more of this game" i would definitely suggest adding DLC to give you additional options for each of your future playthroughs.
The dog (part of the otherwise also good 'A Woman's Lot') is useful as a hunting companion, helper for finding more hidden locations and stashes, and to distract enemies and fight alongside you - a great help in your usual 1v many state - it will also chase and take down escaping enemies you want to finish off. AWL has two story parts, the shorter first part is Teresa, and the longer main part is Henry "helping", and is unlocked in the main story progression (midway+)
From the ashes provides a useful in small ways settlement and a 'reward' in game with the church art... the arena is very useful for training fighting in a more varied way than Bernard, and a more controlled/optimisable way than the Rataje tourney. Mechanically the implementation was a little weak, so I wouldn't recommend buying it at full price... as an included part of the full package it is worth the effort put in to it.
The other story dlcs are entertaining if short, (and as with any other quest it is quite possible to shortcut any open stage) (examples from the main game, [spoiler}'discovering the main bandit camp' before resolving the "Neuhof 4" investigation and it's leads - or going straight to the counterfeiting camp before tracking the clues leading to it in Sassau[/spoiler]) - This lead to some claiming that the dlc lack content or length... They aren't over long, but take a few hours each, woven into around 10-15 hours of standard gameplay if you don't focus entirely on each in turn.
