Theresa makes it out either way, either to you distracting them or she tells a story of something else allowing her to get away. She is needed alive anyway, due to her being the main protagonist in A Womans Lot DLC.
You still get the option to court her I believe, but that doesn't trigger until later. I could be wrong as I've never tried to court her after my first playthough. I'd check for you but I deleted my previous saves and started my celibacy run.
-Whistle(press X) before you steal one of the horses
-Steal the horse and run into them
ofc combat should also work
When I was running away, instead of following the path I ran straight ahead down the hill and eventually saw a horse at the bottom of the hill on the right. I mounted that horse and started riding toward the marker. I definitely know that I didn't see her being attacked by anyone and if I heard any screaming, which I don't recall, I ignored it anyway. It wasn't until I read some walkthroughs for the Cavalier achievement and saw a video that I realized you needed to continue to follow the path instead of abandoning it to get away if you were going to see her being attacked.
When telling my story to Stephanie I thought it was weird that saving Theresa was part of the dialog options yet I didn't recall ever being given the opportunity to save her! I had totally rode around it and never knew it was even in the game!
At least I can get the achievement easily enough from restarting another playthrough.
