I've brought him a ♥♥♥♥ ton of food just as he asked (in "a needle in a haystack" quest). Doesn't give me any lockpicks. The amount of money that he has is insufficient for buying even a single lockpick, and I'm unable to persuade him in trade. What should I do?

He also buys potions, which the dialogue makes no mention of. Yet that's the only realistic method of trading him enough value to get lockpicks, at least in hardcore mode.

(Many potions can be brewed ad infinitum because the ingredient chest restocks daily.)

There is a lockpick behind the alter no need to assassinate anyone.
There is also a secret stash at the balcony where your dorm is its a loose tile, head out there and and turn right its at the 2nd last near the end use the investigate or loot cant remember.
Use that to buy more keys or lockpicks from the dude in the mess hall he sits opposite you.
It adds a side quest but gives you 200 groschen plus a knife and a book see this

As someone said, there's a secret stash containing 200 Groschen and a dagger in the balcony right out the cloister dorm. It's fairly obvious.

That's way more than you'll ever need, assuming you're not totally dumpster tier at Lockpicking.
