You might have NPCs huddling over it's body and whining about a corpse for a while though.
If you don't mind jail, kill a dog and purposely get arrested and put in jail, you will wait it out but basically the dog is dead and you don't get that much hate on you.
You can also poison the meat and then drop it, they'll die eventually.
You can still Stealth Kill the Sentries - most Camps have 1 or 2 sentries that roam about - and they should be your first target anyway. And i can usually manage to get the dog to come out and play before the camp is too alert - and the dog drops with a simple a shot.
And pulling far enough away will drop aggro, and then let you do as you choose.
But again - too much work for me...
I saw a rabbit, run strait across a dog's paws right thru the middle of the camp, and it broke all immersion for me. I don't care how well trained a dog is, it would be going after that rabbit, or at least be somewhat distracted. (also, the rabbit, maybe should not want to do that to start with.)
I feel like the dogs work fine in town, but outside of town on camps, the lack of reaction to wildlife, feels a bit off, at least in certain areas and certain smaller in the wood camps.
