what happens to pebbles?
what happens to him/her after you trade them in?

They just dissaper or you kill them sorry I cant trade in Pebbles.
Once the horseman skills are fully upgraded and do some of the horse racing quests and find the cool gear you can upgrade Pebbles armor, bags and he runs fast. Carries a lot enough for me.
found a screen shot maybe a tad old as I have activated the racing perk

Not completly related but when you want to buy a new horse and trader ask if you had a look on them yet..... And I am thinking where the heck can I take a look on the horses. How do that? Go and compare every horse until find those for sale?

Once you have the free Pebbles it is given to you then you approach another horse and the option to compare is now available :)
Soemtimes you find a free bandits horse you may ride it but you cant keep it while you have Pebbles.

In my games Pebbles stays at the stable where you traded him/her in, you can go back and visit.

Yeah, that's what happened to my Pebbles, as well. He's out to pasture living the best life a horse can imagine.
