If you have no stamina, you cannot sprint. If you are staggered, you cannot fight back or move. If 5 opponents surround you, and all attack at once, you will constantly be out of stamina and staggered. But you have clearly discovered this (and it sucks being beaten to death).
It is very unrealistic (IMO) that 5 peasants with sticks can destroy a knight in full plate armor - this shouldn't happen irl, but it does in KCD. My level of fury over this has been tamed with time, because the game is pretty cool otherwise.
So, the obvious suggestion, now that you have learned a particular mechanic, is to not allow yourself to be surrounded, avoid the ambushes, or "get used to dying" (sorry for being so blunt).
My real fury came when the peasants killed me and i had to reload and replay 30 minutes of the game, because of the stupid save policy - i think i had to walk away, but my headphones did survive :)
From my experience, Training with Bernard will never allow you to win these battles (Level 10+, Level 6+ in weapons and defense = still killed by peasants w/sticks).
I now use an add-on called "Ultimate Saving" that lets me save unlimited times.
I also use Poison arrows to weaken my foes before switching to melee and finishing them off (this was one of Bernards tips by the way, controlling you space - he has many that really help)
And i tend to run or back up often to keep them from surrounding me (keeping control of my battle space - another Bernard tip). I have discovered that only one or two of the ambushers will sprint after me when i run by them, but mostly, i rely on my bow to winnow down my opponents.
Remember, during the tutorial in Skalitz, there was a part at the end where if you chose to stand and fight you would die. Keep this in mind, since that is also a lesson. Henry is not an over-powered champion like in many other single-player games (i have played many of those too).
But stick with it - the game story is good, and the writing is top notch.
Those sticks you are talking about, those are polearms. The deadliest weapons in the game.
I get that they didn´t want the game to become too easy bit it feels like every bandit received a knight combat training from bernard lol.
