I waited until I had completed the Courting of Theresa.
Suggest you grab a good youtube walkthrough you might need a few tips are some stages. Good Luck :)
Since you're not playing with Henry anyway, you can start Theresa's story at the Miller right away. It doesn't influence the story, difficulty or rest of the game in any way.
However, since this game is more about improving yourself as a player rather than just gaining some perks and levels, I suggest you hold off with starting Theresa's story until you, as a player, get a good feeling of stealth and combat. Otherwise you might be a little overwhelmed by the DLC, just because it throws mechanics at you which the game assumes you already understand.
For the second story, I strongly suggest to wait until after you completed the Monastery part of the main questline.

Henrys skills don't matter when playing as Theresa, but yours do.
I played it when about halfway though the main quest and really enjoyed it.But a lot of people say it's very difficult which it wasn't for me, so they probably played it too soon, before they were comfortable with the game mechanics.
I already pretty much knew what I was doing with the game, so I didn't have any problems and enjoyed the different approach to playing the game that you have to take when playing the Theresa portion.
In the second run through with the Woman's Lot DLC, I was a bit more judicious about starting it. The interactions in Rattay make more sense in terms of plot if you don't ask the launch question right off the bat. Assuming that you already know how to use Stealth skills and handle a bow (and if you're shaky in these departments put The Question off until after Henry has gone hunting with Hans Capon), I would think that you should launch the Theresa story after you're completely settled in with miller Peshek. Just don't start it when there's anything else important going on, because it takes a while to work through Theresa's adventures and unless you have a phenomenal memory you'll have trouble remembering what Henry was up to when you went down the rabbit hole.
Theresa plays differently from Henry. They do different kinds of things and solve problems in different ways. You won't be able to play the Theresa story with Theresa as a female version of Henry. What's enjoyable about it is that it shows you what Skalitz and environs was like before the Cumans showed up, and it forces you to look at familiar things with a different set of eyes.
If you've been shy about shooting nests out of trees, that's one thing that will happen in the Theresa story that will influence how you play Henry. Also, Theresa happens to be the daughter of a miller. If your Henry has been sticking to the straight and narrow, Theresa can be a real eye-opener because although she isn't particularly larcenous by nature, she was exposed to a lot of things growing up that Henry would never have had any contact with.
