How do I make stolen items mine?

I stole this armor no one saw me and this random guard comes up and takes it from me, there is no way he could've known. How do I make the stolen gear mine?

That's "realism" for you. Now, granted.. some things could be reasonably assumed to be stolen.. that guy that looks like a penniless beggar probably doesn't actually own that full set of plate armor. But still, some things shouldn't be clearly identifiable as having been stolen.

Some items i have stolen have lost the stolen flag after a while not sure what has triggered that thought, maybe it happens after x days /week have passed.

Some guards seem to have 6th sense. You rob stuff from house at middle of nowhere and somehow the guards at next village are after you.

A little off topic but i wish if a item was stolen in town A that guard in town B would not notice that its stolen only seems to make more sense

You have to launder it. It's the same problem criminals always have - conceal the source of ill-gotten goods/money.

Either sell it in another city or keep it in your chest for long enough.

Fair enough about the armor... but I went to hunt rabbits and their meat was labeled as stolen. So I could not sell it. I don't think, something like that was intended.

Unlike many of the comments here are saying, you do not need to launder it to remove the stolen status, you simply need to either keep it on you without getting caught) or hidden in a chest for long enough for the status to go away. im not sure of the exact time frame but it has worked it many of my items that ive killed people for.
