I did remove only the weeds he did mention to remove. Nothing else, Just. he still throw a hissy fit. and I cant find any more weeds to pull out in the garden plots.

Now, I did accidentally pick maybe 2-3 mint plants by accident. The swaying of the plant made it so that I picked the wrong thing.
I also picked (1) wormwood plant outside of the garden borders, and (1) mint plant inside the garden (but I told the brother that not a leaf was wasted). I picked nothing else from the Monestary.
Can't remember the exact count (doesn't match Elisarion's numbers, except maybe thistle), but there were no other herbs in inventory.
Really it is just a case of look it over carefully it seems. I find crouching helps distinguish the dandelions from just the small yellow flowers in grass texture.
There is a small patch of comfrey just past the mint patch. There is a very small part just past the flat board boarder where you can stand is still in the area that needs weeding. I did the whole comfrey patch just to be on the safe side. I came up with 33 dandelion, 42 nettle.and 22 thistle (there may have been a few from the wild before I got the quest). After passing over the area several times, the area was still active until i had talked to the priest. I'm not sure if that small area in the comfrey patch counts or not, but it's worth a shot. Just don't pick anything else. Hope that helps.
For me, I picked all the necessary weeds, and he was happy.
However, when I went to pick up my next quest from him (about his book), he insulted me about my earlier job at the garden (even though he had said I did a perfect job).
Guy just can't be satisfied! :P
